Meatless Monday: Mediterranean Tostadas

I’m a little obsessed with Mediterranean foods right now after learning about the major health benefits of a healthy diet high in healthy fats (If you are interested reading the New York Times Article click here), so in California tradition, I have come up with a fusion recipe for Mediterranean Tostadas. Think Mexican tostada meets the Greek Islands. Essentially it is a whole wheat pita topped with tons of veggies, hummus,olives,  basil, and a little feta. Pop it it in the oven to melt all the flavors together, and you have a healthy, flavorful, and  almost instant meal.  These come out looking really pretty so they are great for entertaining, too!


You can get all of these ingredients at Trader Joe’s

1 Whole Wheat Pita

2 Tablespoons Hummus

2 Artichoke Hearts, chopped

3 Tablespoons Roasted Red Peppers (you can make these or buy them in a jar)

3 slices roasted eggplant (slice eggplant into 1/2 inch slices, drizzle with olive oil. Bake at 400 degrees for 20 minutes)

4 olives, sliced

1 oz feta



1. Spread Hummus on pita.

2. Top with remaining ingredients. Layer eggplant, then peppers, then artichokes, olives, feta, basil.

3. Bake in 350 degree oven for 8 minutes and eat!
